Who says you can't enjoy a delicious treat while sticking to your Low FODMAP diet? These mouth-watering Peanut Butter Rice Crispy Chocolate Squares are not only incredibly tasty but also gut-friendly. I have made them numerous times and they always disappear at the dinner event, family party, or taking to work. Perfect for those with IBS, SIBO, Gluten Free, and other food intolerances. These squares are easy to make and will satisfy your sweet tooth without any of the discomfort. Each batch makes 16 squares, with a Low FODMAP serving size of 2 squares, making them perfect for sharing or indulging in small portions.
Makes 16 Squares, Low FODMAP is 2 squares

Ingredients:

  • 1/8 cup sugar (2 tablespoons)
  • 1/2 cup peanut butter
  • 1/2 cup corn syrup
  • 1/3 cup FODMAP Foods Vanilla Meal Replacement Powder
  • 3 cups rice crispy cereal

Topping:

  • 1/2 cup milk chocolate chips

Instructions:

  1. Cook the Base:

    • In a medium saucepan, combine the sugar and corn syrup. Cook over medium-low heat, stirring continuously until the mixture just reaches a boil.
    • Add the vanilla meal replacement powder and stir until well combined and smooth.
  2. Incorporate Peanut Butter:

    • Turn off the heat and mix in the peanut butter until the mixture is smooth and fully integrated. If the mixture cools too much, reheat gently on low heat. Be cautious not to overheat, as this can alter the taste of the peanut butter.
  3. Combine with Rice Crispies:

    • In a large glass bowl, mix the peanut butter mixture with the rice crispy cereal until well coated.
    • Press the mixture into a greased 9x9 pan, smoothing it out evenly.
  4. Add the Chocolate Topping:

    • In a small saucepan over low to medium-low heat, melt the chocolate chips, stirring constantly with a silicone spatula until smooth. Alternatively, you can use a microwave or double boiler.
    • Pour the melted chocolate over the rice crispy mixture, spreading it evenly with the spatula.
  5. Cool and Serve:

    • Allow the pan to cool at room temperature or speed up the process by placing it in the freezer.
    • Once cooled, cut the mixture into 16 squares by cutting three times each way.
